Nutty Steph's Apple Granola LoafMade with hand-baked Vermont GranolaMix Dry: 1.5 c flour 1 t baking soda 1 t cinnamon 1/2 t salt 1/2 c white sugar 1 cup Vermont Granola 1 cup diced apples Mix Wet: 1/8 lb butter 1/2 cup oil 1 egg 1/2 cup brown sugar or maple syrup 1 cup applesauce
Instructions: Make a pit in the dry and pour the wet in the middle. Fold until just moistened. Put 2 ice cream scoops worth in a mini loaf pan. Top with Nutty Steph's Topping (below) and bake. Makes 3 mini loafs. Nutty Steph's Topping: 1 cup granola 2 T syrup 2 T butter
