Annie’s Naturals

Primavera Pasta Salad

A quick and easy summer classic made with salad dressing from Annie's Naturals.


Ingredients:
  • 1 package rotini, penne, or shells
  • 1-1 1/2 bottles Annie’s Naturals original Goddess Dressing
  • 1 red pepper, chopped
  • 1 medium red onion, chopped
  • 12 cherry tomatoes, sliced in half
  • 1 1/2-2 cups of corn
  • 1 tablespoon olive or vegetable oil
  • 2 tablespoons butter
  • 1 cup seasonal vegetables (avocado, or broccoli, asparagus, steamed and cooled)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup pine nuts
Directions:

Cook pasta according to package directions. Drain and toss with 1 tablespoon olive or vegetable oil. Add pinch of salt and pepper.

In medium skillet, melt butter. Add corn and toss until corn is toasted. Combine pepper, onion, tomatoes, corn, and seasonal vegetables, and toss with pasta. Add salt, pepper, and pine nuts and toss. Add Annie’s Naturals Goddess Dressing to pasta and vegetables. Toss well.

Serve at room temperature or refrigerated. Garnish with chopped parsley. Serves 8.
