Maple Apple Drizzle - Pork Tenderlon

 A quick and delicious way to dress up that Tenderloin



PORK TENDERLOIN WITH MAPLE APPLE DRIZZLE  

Ingredients:      1.5 lb         all natural pork tenderloin
                        1 Tbsp      Cabot butter                            
                        7Tbsp       Sidehill Farm Maple Apple 
                                         Drizzle

                        3 Tbsp       dried currents (or raisins)
                        1 Tbsp       minced shallots
                        ¼ Tsp        ground sage 
                         ¼ cup       Port wine or Calvados    
                        dash          salt

preheat oven to 350

Slice tenderloin lengthwise to within ¼ inch of going all of the way through.

Place a sheet of plastic wrap over the tenderloin and pound with a mallet to near ¼ inch thick.

Rub the flattened tenderloin with butter — more or less to taste.

Spread 3-4  tablespoons of the Maple Apple Drizzle, currents, shallots, sage,salt evenly over the surface.

Roll the tenderloin up and place in an uncovered 9 x 9 pan.

Pour the port wine over the top

Place in the oven for approximately 30 minutes.
 
Take out of the oven and let rest for 5 minutes. 

Reduce pan juices while resting.

Slice the tenderloin into ½ inch thick slices and top with a some of the reduced pan sauce and / or serve with a tablespoon of Maple Apple Drizzle on the side.
