Woodstock Granola

Banana Bread

This classic bread taste great on its own or toasted.


5 ripe bananas
4 eggs
1 c. shortening
2 c. white sugar
1 T. vanilla
3 c. all purpose flour
1/2 c. Cranberry Maple Walnut Granola
2 t. baking soda
1 tsp. salt

Preheat oven to 300 degrees. Grease 2 9x5 pans. Whisk together flour,  granola, baking soda, and salt in small bowl. In a medium bowl, mash bananas and stir in eggs to combine well. In a large bowl, beat shortening and sugar until fluffy. Stir in banana mixture and vanilla. Stir in flour mixture and blend completely. Divide between the prepared pans.

Bake for 1 hour and 15 minutes or until toothpick comes out clean. Cool in pans for 10 minutes then turn out onto cooling rack and cool completely.
